The hotel’s story is also reflected in the people who have been part of it from the start. Jane Booker, a server at 1823 Kitchen & Bar, has been with the property since opening day, and Steve Heald, hotel manager, joined within weeks of the launch.

Grand Hyatt Tampa Bay has been actively involved in the local area for decades, partnering with organizations like Tampa Bay Watch, Feeding Tampa Bay and Habitat for Humanity to support programs that make a real difference.
This commitment is visible at Oystercatchers, the hotel’s waterfront restaurant and a cornerstone of the property since opening day, where sustainability and tradition go hand in hand. Through Tampa Bay Watch’s Shells for Shorelines program, discarded oyster shells are recycled to build living reefs that improve water quality, create wildlife habitats and protect shorelines from erosion. Since joining the initiative in 2023, Oystercatchers has recycled more than 12,000 pounds of shells, turning everyday operations into a tangible environmental contribution. The restaurant also remains a beloved setting for celebrations and gatherings. With the recent return of its Sunday brunch buffet, Oystercatchers has revived a cherished tradition that has welcomed generations of families and visitors, honoring its history while creating space for new memories and reinforcing its enduring role in Tampa’s dining scene.
