Today the MICHELIN Guide revealed the 2026 restaurant selection for Florida and for the first time the selection covers the entire state. Notably, this year’s selection features two new One MICHELIN Star restaurants.

Emelina in West Palm Beach and Mutra in Miami both joined the selection for the first time with One MICHELIN Star. Additionally, Fat Beet Farm Kitchen and Bakery in Tampa was awarded a Green Star for leading the way in mindful gastronomy. The full selection, including Bib Gourmands and recommended restaurants totals 200 eateries spanning 41 cuisine types.

“What began just a few years ago has grown into something truly remarkable,” said Gwendal Poullennec, International Director for the MICHELIN Guide. “Florida’s culinary landscape continues to evolve, which led our anonymous Inspectors on a journey from the Panhandle to Key West to uncover the best dining experiences and hidden gems to make up this year’s selection. As we welcome two new restaurants into the MICHELIN Star family for the first time, we celebrate the depth of talent across all of Florida. Congratulations to all the chefs and restaurant teams represented in this year’s selection!”

Restaurant plaques will be provided by our Destination Partners to each restaurant in the coming months.

One MICHELIN Star

Emelina (West Palm Beach; Cuban cuisine)

Chefs Osmel González and Camila Salazar's cuisine at Emelina asks what would Cuban cuisine look like if global inspiration was applied to its foundation. It's an intimate space, with 16 counter seats facing an open kitchen, but it's their keen perspective and skillful cooking that feel deeply personal. Most of the ingredients are sourced from South Florida to tell a unique story. Poached Sebastian Silver oysters with yucca foam and a mushroom powder shows refinement, while marinated Redland cherry tomatoes with Cuban oregano chimichurri and Florida macadamia milk foam showcases how simple ingredients can shine. The 45-day, dry-aged Florida beef is accompanied by memorable green mango mojo sauce and Cuban black bean sauce, while the rabo encendido, a reimagined version of a classic oxtail stew, is a standout.

Mutra (Miami; Middle Eastern cuisine)

Israeli Chef Raz Shabtai has brought his take on classic Middle Eastern cuisine to diners in sunny Miami. Named for his grandmother, this is a place where snagging a seat at the expansive chef's counter is a must. The menu is hyperlocal and rotates often, so don't be surprised when something runs out. Fear not, however, as the excellent staff will help you discover your new favorite. Some notable dishes include a show-stopping plate of beets, earthy and perfectly cooked in a pool of ajo blanco and topped with a stunning beetroot sorbet and almond crumble. The signature lamb kebab with smoked eggplant cream and tomato oil is pure comfort, as is chicken a la Tunis, juicy and flavorful with harissa-studded chickpea tomato stew and some of the lightest, fluffiest and well-seasoned couscous this side of Marrakesh. Muhallebi, a creamy Middle Eastern milk pudding with aromatic rosewater, tahini crumble and pistachio, is a sweet and satisfying finale.

One New Restaurant Highlighted for Its Inspiring Vision

Fat Beet Farm Kitchen and Bakery (Tampa) is highlighted by the Green Star for its inspiring and committed vision for the future of gastronomy. The Green Star recognizes restaurants that have impressed Inspectors through their approach. By shaping a community of innovative establishments driven to pursue progress in the role of restaurants, the Green Star fosters dialogue and collaboration, encouraging them to inspire and evolve together.

Thanks to the rigorous MICHELIN Guide selection process that is applied independently and consistently in more than 60 destinations, the MICHELIN Guide has become an international benchmark in fine dining.

All restaurants in the Guide are recommended by Michelin’s anonymous inspectors, who are trained to apply the same time-tested methods used by Michelin inspectors for many decades throughout the world.
