RIVIERA BEACH, SINGER ISLAND, Fla. – Oct. 14, 2019 – Marc Rosen is the new executive chef of the AAA-Four-Diamond-rated Palm Beach Marriott Singer Island Beach Resort & Spa and its award-winning signature restaurant, 3800 Ocean. Rosen brings to his position more than 40 years of hospitality experience, including 27 years as executive chef for restaurants and hotels in Florida’s Palm Beaches, southern New England, Chicago and New York City.

Over his long career, Rosen has been featured on The Food Network and has cooked for international sports figures, entertainers and heads of state, from President Reagan to Tiger Woods, Barbara Streisand and the Bolshoi Ballet.

His love for seafood and culinary fusion will inspire the dishes he brings to the new menu. Rosen plans to incorporate menu items with Asian, Italian, Mediterranean and American flare, and will make the most of local farmers and purveyors to bring the freshest ingredients to diners.

Rosen’s Florida experience includes executive chef positions at PGA National Resort & Spa in nearby Palm Beach Gardens and Disney’s Vero Beach Resort. Over 11 years in Providence and the Boston area, he opened Renaissance Boston Patriot Place Hotel, Bar Louie Tavern & Grill and the Providence Hilton, and helmed The Capital Grille. For three years prior, he was corporate chef for La Strada Corporation in Chicago.

Rosen launched his career in Manhattan as executive sous chef of the legendary Russian Tea Room in 1987. He served as executive chef of the city’s Demi and opened and consulted on two sister restaurants—Barcelona and Citron47.
